Technologies to Recover Polyphenols from AgroFood By-products and Wastes

Mango seed is a by-product discarded in the processing of fruit. In this study, the extracts obtained by microwave-assisted extraction (MAE) and fermentation-assisted extraction (FAE) were prepared and subjected to antimicrobial evaluation against Staphylococcus aureus ATCC 25923, Escherichia coli ATCC 25922, Listeria monocytogenes ATCC 7644, and Klebsiella pneumoniae. In addition, the antioxidant stability of the extracts during storage for 12 months was evaluated. According to the results, MAE and FAE extracts showed high antimicrobial activity against S. aureus, E. coli, and K. pneumoniae. FAE showed the highest area of inhibition against S. aureus (3.1 cm2) and K. pneumoniae (4.5 cm2). However, MAE presented the highest inhibition value against E. coli (7.1 cm2). Gallotannins were the majority polyphenol family in the extracts, representing 60% and 50% for FAE and MAE, respectively. The …
