Introductory concepts in basic and applied nutrition are explored through considerations of the human body and the food supply. Nutrients are first introduced as chemical compounds which are basic to life, and then as components of foods. Metabolic processes within cells which provide energy and sustain growth and development are examined. Nutritional support systems (digestive and transport systems) and nutritional aspects of the other body systems (muscles, bones, nerves, etc.) are discussed. Human nutrient requirements at different life stages are reviewed; such concepts as nutrient standards and nutritional status are presented. Practices for improving the quality of the diet, and the adequacy and safety of the food supply, are also described.
