The antioxidant properties of the leaf and root extracts of horseradish (A. rusticana) cultivars Lipnik, Mazaniec, Osjaków and Tadle were determined using Fe3+ ion reduction and deoxyribose oxidation inhibition methods. Alongside this, the antioxidant properties of the extracts were tested on mice line C57BL/6J fed with a standard diet or with a diet enriched with 1% horseradish. The leaf and root extracts from the 4 horseradish cultivars did not exhibit strong antioxidant properties. The volatile oils from the horseradish roots exhibited stronger antioxidant properties compared to pure allyl isothiocyanate. Diet containing horseradish had no significant effects on the antioxidant plasma and heart activity of the mice.
