Poultry products play an integral role in global diets, with both meat and eggs growing in popularity and importance year on year. However, there is also a well-established link between these products and human illness, with pathogens such as Salmonella, Campylobacter jejuni and norovirus being linked to the poultry product industry. It has thus become important to develop robust and effective in-line antimicrobial approaches within the poultry industry that exist from the time of egg-laying like vaccination and biosecurity protocols to industrial processes like chilling and washing to domestic product storage in chilled refrigerators.
