Fruits and vegetables are one of the most abundantly produced agricultural commodities, and their processing operations generate a substantial quantity of waste, posing a variety of challenges to environmental sustainability. However, these wastes contain a wide range of health-promoting compounds that can be utilized to improve the nutraceutical and functional characteristics of food products. Besides, various high-value chemicals and bioproducts can be produced from fruits and vegetable wastes. In this regard, the wastes generated from fruit and vegetable processing can not only be a sustainable bioresource for the nutraceutical and functional food industry but can also be a promising feedstock for biorefinery.
