Laboratory extraction methods serve to obtain native starch samples in sufficient quantity and representativeness to characterize and evaluate performance. The extraction methodology is especially important in cases of research where new sources of raw material still remain little known. However, they hardly achieve the same degree of purity achieved by industry. This chapter presents a description and critical analysis of both traditionally used and new methods to extract starch in the laboratory cited in the literature. This chapter also highlights the necessary care and standardization to achieve good extraction. The reader will obtain information regarding yield calculations and extraction methods to be adopted for the main underground raw materials.
