gated at drying temperature of 45, 55, 65, 75 and 85° C and air velocities of 1.0, 1.5 and 2.0

Abstract
The convective drying behavior of osmodehydrated button mushroom samples was investi gated at drying temperature of 45, 55, 65, 75 and 85°C and air velocities of 1.0, 1.5 and 2.0 m/s. The initial moisture content of the osmotically dehydrated mushroom samples were in the range of 387.33 to 405.30% (db) for all the samples investigated and after drying upto (nearly) constant weight, the moisture content was reduced in the range of 7.84 to 12.16.% (db). There was a wide variation in drying time from 270 to 780 min for the range, of drying temperatures and air velocities taken for study. Minimum time in drying was observed for higher air temperature (85°C) and maximum time was recorded for low air temperature (45°C) for all air velocities.
