Celiac disease (CD) 10 is widely defined as an autoimmune disease triggered by the
consumption of dietary gluten in genetically predisposed individuals. It is now well
documented that a strict gluten-free diet (GFD) for life is the only method currently available
to treat and prevent CD complications (1). Present evidence strongly suggests that a GFD
