This study investigated the stability and characteristics of l-ascorbic acid (AA)-loaded
chitosan (CS) nanoparticles during heat processing in aqueous solutions. AA-loaded CS
nanoparticles were prepared by ionic gelation of CS with tripolyphosphate (TPP) anions.
